Yesterday, my Internet service was sporadic. Thankfully, iPhone allows me to stay in touch on all fronts, even though I have to squint a little. At one point, the service went out completely at a critical point in my workday.
Rather than throw a tantrum, which is what I felt like doing, I inspired myself to create a fabulous dish. Here's the recipe.
Ingredients
some orzo (I just made a lot of it)
just over a pound of fresh shrimp (for vegetarians, I think you could use extra firm tofu!)
1/4 cup of butter
6 green onions, tops removed and chopped
3 thinly sliced fresh garlic cloves
about 10 sun-dried tomato slices
Preparation
1. Cook the orzo according to package directions. While that's cooking, melt the butter over a medium flame. Add green onions and saute until both are nice and soft.
2. Add shrimp to the butter mixture and stir well while it's cooking. Be sure to keep those shrimpies moving so all of the garlic and onion goodness is mixed in.
3. Add the sun-dried tomato last, and stir some more. (I love sun-dried tomato. My husband picked them all out.)
Once the orzo is done, strain it as usual. Serve the shrimped up goodness on top. The whole meal took about 25 minutes from start to finish. Bam!
